Moroccan Eats

I have a ridiculous sweet tooth, and sometimes this means I might accidentally eat a whole bar of Milka in one go.. so to balance it out I like to try and create healthy meals most of the time. Last night I tried a new recipe for healthy Moroccan meatballs with couscous, and it came to only 350 calories a portion - so I thought I would share it with you guys as it was actually pretty good!

Ingredients (serves 4):
500g turkey mince
1 tsp cinnamon
2 tsp each: chilli power, cumin and corriander (I cheated and used 6 of of Shwartz 'Season-All')
1 onion, finely chopped
1 orange, zested and chopped
250g plain couscous
250ml hot chicken stock
Parsley to season

1. Mix the spices, onion, orange zest and spices together in a bowl. Salt and pepper to taste. Roll the mixture into meatballs.

2. Put the coucous into a bowl, and add the chicken stock. Cover bowl with a plate and leave couscous to cook for around 10mins.

3. Heat some olive oil in a pan and add the meatballs, turn them regularly and cook for around 12 minutes in total.

4. Fluff couscous and season, mix in the chopped orange and a little parsley. Stir in some butter (optional) and you're ready to serve!

(I added some roast carrots for vegetables, but I'm sure anything could work)
